Manuella’s Chili Powder Whole Chicken

A Twist on a Delish Slow Cooker Recipe

What a crazy and uncertain time we are living in right now. Not having control over what is to come is a scary feeling. I find that focusing on things that I do have control over really helps bring a little bit of stability and happiness to my world. That is why I have found myself in the kitchen quite a bit during this quarantine. I have been making dishes that I have never made before. My fiancé, Barrett, and I have made been making fun recipes: French Fries, Mayonnaise, and Pot de Crème with Caramel on top. But after eating a bit unhealthy, we are ready to eat clean. To be honest, eating healthy makes me feel better. I find more clarity mentally and feel better physically. We are still in the kitchen, but just on a health kick. We have been cooking up some fun and healthy recipes: Homemade Hummus, Shrimp Curry, and Lettuce Cups (feel free to email me, if you need a recipe: ceblackwell92@gmail.com).

So how did I come to making this dish: I have always been intimidated of cooking a whole chicken, but when is a better time to try when we are all stuck inside?! And now that I have done it… I don’t know if I can go through life without making this all the time! And guess what? It wasn’t that scary! Barrett said, “I could eat this chicken every day of the week!” Wow! Not only was that nice to hear, but the dinner was certainly healthy and delicious! Win win.

Here’s what I did: I went online and found a whole chicken recipe from Delish (Delish Slow Cooker Whole Chicken Recipe). I tweaked the dish to make it my own, BUT here is the fun twist! I am using Manuella’s Chili Powder! Of course you can just use store bought chili powder, but Manuella’s Chili Powder is THE way to go! I highly suggest buying some.

It is one of my favorite ways to bring flavor to a dish. I use this chili powder multiple times a week in my recipes. Manuella’s Chili Powder Whole Chicken

Serving 4-6 People

Prep Time: 15 mins

Cooking Time: High for 2 ½ to 3 ½ hours

Post Time: 15 mins

Ingredients:

Olive Oil

1 Lemon

4 Pats of Salted Butter (which is 2 Tbsp. of Butter cut into 4 Pats)

2 Tbsp. Packed Brown Sugar

2 Tbsp. Manuella’s Chili Powder

1 Tsp. Fresh Thyme (Chopped)

1/2 Tsp. Fresh Rosemary (Chopped)

1/2 Tsp. Fresh Sage (Chopped)

1 Whole Chicken, Neck and Giblets Removed

Kosher Salt

Freshly Ground Black Pepper

Optional Veggie Ingredients:

6 Carrots (Peeled and Chopped into Thirds)

4 Parsnips (Peeled and Chopped into Fourths)

1 Red Onion (Chopped)

Directions:

Grease a large slow cooker with Olive Oil.

Roll aluminum foil into a spiral and place in slow cooker, creating a rack for the Chicken.

Stuff Chicken with 1 Whole Lemon.

In a small bowl, whisk together the Brown Sugar, Manuella’s Chili Powder, Thyme, Sage, and Rosemary.

Put 4 Pats of Butter under the skin of the Chicken.

Pat Chicken dry with paper towels and season generously with Salt and Pepper.

Rub Brown Sugar mixture all over Chicken, then place in slow cooker, breast side up.

Cook on high for 2 ½ to 3 ½ hours, until the juices between the leg and the thigh run clear or a thermometer inserted into the thigh reads 165°. If you have a newer slow cooker then it should cook for 3 hours on the dot.

Optional: About 40 minutes after you have started to cook the Chicken, add the Carrots, Parsnips, and Red Onion. You can also choose which veggies you think would go best with this dish!

Once the Chicken has been cooked, remove the Chicken from the slow cooker.

To crisp up the skin, transfer Chicken to a large baking sheet and broil until golden, 3 to 4 minutes.

Let the Chicken rest for 10 minutes before breaking it down.
